Saturday Special- Paneer Tomato Curry

Ingredients

1. Paneer-200gms
2. Tomato-4
3. Onion - 2
4. Turmeric powder-1/4 tsp
5. Chilly powder-1tsp
6. Cumin powder-1/4tsp
7. Mustard seeds
8. Cumin Seeds
7. Oil
8. Salt

9. Curry leaves


Preparation

  • Soak the Paneer in hot water for 5 min
  • Shallow fry the paneer cubes.
  • Remove the fried paneer and soak it in salted hot water.
  • Remove the skin of the tomatoes
  • Puree until the tomatos have become a very smooth sauce.
  • Heat Oil in a pan, put cumin and mustard seeds
  • Add Chopped onion and saute till it become translucent.
  • Add turmeric powder, cumin powder and chilly powder,
  •  Stir it for 1 or 2 min
  • Then add the tomato puree slowly and bring it to boil.
  • Keep it low flam for 10-15 minutes till the gravy thickens
  • Drain the paneer cubes from water, and add to the gravy. 
  • Add salt to taste. Increase heat to medium, and let it cook for about 5 minutes.
  • Remove from flame and Garnish it with Corriander or Curry leaf.
         Serve paneer and tomato curry with rotis or chapatis.

Special Dosa



 Ingredients
  1. 1cup rice
  2. 1 cup chana dal (Kadala parippu)
  3. 1 cup urad dal
  4. 1 cup tuvar dal
  5. Pepper powder-1 tsp
  6. Red chilly 4 nos 
  7. Onion- 1 medium
  8. Curry leaves
  9. Hing 2-4 pinch,
  10. Salt  to taste
Preparation

  • Soak all the dals and rice together after washing them thoroughly. Let them soak overnight. 
  • When soaked, grind them in a blender coarsely along with  red chillies, curry leaves
  • Add pepper powder and hing. 
  • Add chopped onions and salt to taste.
  • Heat a nonstick tawa or griddle and pour one ladleful of batter. Make thick dosa and serve hot.

ഇന്ന് അത്തം

ന്ന് ഓഗസ്റ്റ്‌ 31 , 2011 .... അത്തം.


ഓണാഘോഷം ഇന്ന് തുടങ്ങും.  മഹാബലി തമ്പുരാന്‍ കേരളത്തിലേക്ക് വരാനുള്ള തയ്യാറെടുപ്പുകള്‍ ഇന്ന് തുടങ്ങുമെന്നാണ് വിശ്വാസം.  എല്ലാരും പൂക്കളം ഇടാന്‍ തുടങ്ങുന്നതും ഇന്നാണ്. ഞാന്‍ നാട്ടിലായിരുന്നെങ്കില്‍ എന്ന് ആഗ്രഹിച്ചു പോകുകയാണ്. പൂനെയില്‍ എന്ത് പൂക്കളം :( പക്ഷെ ഇന്നേക്ക് പത്താം ദിവസം .... അതായതു തിരുവോണം അടിച്ചു പൊളിക്കാന്‍ തന്നെ തീരുമാനിച്ചിരിക്കുകയാണ്.  ലീവും എടുത്തു. എന്‍റെ ദിയ കുട്ടീടെ രണ്ടാമത്തെ ഓണമാണ്. ഓണക്കോടി  വാങ്ങണം...പൂക്കളം ഇടണം , സദ്യ ഒരുക്കണം....  


അങ്ങനെ ഒത്തിരി ഒത്തിരി കാര്യങ്ങള്‍....

Green Peas Pulav

Ingredients:
  1. Basmati Rice- 1 &1/2 cup
  2. Green Peas(cooked)-1cup
  3. Onion-1 medium
  4. Tomato-1
  5. Green Chilly-2
  6. Curry leaves
  7. Ginger -1 small piece
  8. Garlic -3-4 cloves
  9. Lemon juice-half lemon
  10. Cardamom-3
  11. Cinnamon-1-2
  12. Cloves 3-4
  13. Ghee
  14. Water
  15. Oil or ghee
  16. Salt
Preparation:
  • Wash and soak rice for 15min
  • Grind garlic ginger and green chilly
  • Chop onion and tomato
  • Boil water, put cinnamon, cardamom, cloves,salt and 1 tsp ghee
  • Add lemon juice
  • Allow rice to cook
  • Take a pan, saute onion till it turns transparent
  • Add ginger, garlic and green chilly paste and saute it 
  • Add chopped tomato, curry leaves, coriander leaves
  • Once tomato is cooked, add rice and peas 
  • Stir well
  • Serve hot :)

My Favorite Recipe's

1. Chicken Roast

 Ingredients:
  1. Chicken(1Kg)
  2. Small Onions(20 Shallots)
  3. Tomato(3)
  4. Garlic paste(2 tsp)
  5. Ginger Paste(2 tsp)
  6. Pepper Powder(3-4 tsp)
  7. Chilly powder( as per taste)
  8. Turmeric powder(1tsp)
  9. Red Chillies dry(4-6)
  10.  Salt
  11. Curry leaf
  12. Coconut Oil
Preparation :
  • Cut and clean chicken
  • Crush Red chillies, Onion shallots
  • Chop Tomatoes
  • Mix all the ingredients (1to 10)
  • Keep it aside for 15-30min
  • Heat the pan, Add little water to the chicken and cook it on low flame
  • Stir occasionally to avoid sticking to the Pan
  • Once the chicken is cooked, allow the remaining water to reduce by keeping it on low flame
  • Heat another wok, Pour coconut oil, put curry leaves
  • Put the heated oil on top of the dry chicken gravy and mix it well

2. Chicken Fry


Ingredients
  1. Chicken -1/2 Kg
  2. Ginger paste-2tbsp
  3. Kashmiri Chilly(piriyan Mulaku)-75gm
  4. Turmeric powder: 1/2 tsp
  5. Green Chilly: 2
  6. Curry leaf
  7. Grated coconut-1cup
  8. Vinegar
  9. Salt
  10. Cocunut Oil 
Preparation
  • Cut and clean Chicken
  • Mix the chicken pieces with 1 tbsp ginger paste, 1 tbsp vinegar and salt
  • Marinate  chicken for 15-20min
  • Meanwhile soak and boil the Kashmiri chilly and ground it to a thick paste
  • To the marinated chicken, add the chilly paste(80%), turmeric powder, ginger paste, little salt, vinegar.
  • Mix the remaining chilly paste with grated coconut
  • Marinate for another 15min
  • Heat the Wok, Add coconut oil
  • Once the oil is hot , reduce the flame and put the marinated chicken pieces one by one
  • Cook it on Low flame
  • Once Chicken is cooked, Put the grated coconut , green chilly and curry leaf
  •          Wait for another 2 min and then drain the chicken out from the oil
